banana muffins

akhir tahun 2011 diakhiri dengan banana muffin yang sekaligus menuntaskan rasa penasaranku kepada muffin menul-menul. meski tidak semuaaa jenis muffin aku coba, tapi aku sudah mencukupkan diri bereksperimen dengan muffin ^^
selanjutnya mulai mikir-mikir mau bereksperimen tentang apa... sepertinya aku mulai tertarik dengan choco chip cookies setelah mencoba choco chunk cookies kemarin, kita lihat saja nanti, ditunggu yaaaaa, hihihihi




tambahkan choco chip dan kismis di dalam adonan, membuat rasanya lebih kaya dan istimewa



Banana Muffins

'1001 SNACKS for Instant Gratification'by Gregg R. Gillespie

1-3/4 cups all-purpose flour
2 tsp baking powder (aku cukup 1sdt saja)
1/4 tsp baking soda (aku gak pake)
1/4 tsp salt
1 large egg
1/3 cup canola oil
1/2 cup sugar
2 big bananas, mashed
tambahan : chocolate chips &kismis
1. Position the rack in the center of the oven & preheat to 180 C. If you use muffin pan, lightly grease the pan.
2. In a bowl, combine the flour, baking powder, baking soda and salt...Whisk well.
3. In another bowl, using an electric mixer on medium speed, beat the egg, oil and sugar untin smooth and blended. Add the mashed banana...mix well. Add the dry ingredients and stir just until blended. Do not over mix.
4. Spoon into the muffin cups, drop some raisins & choc chips on the top, filling each about 2/3 full and bake for 25-30 minutes or unti a toothpick inserted in the center of a muffin comes out clean.
Cool slightly on wire racks and SERVE WARM.

chocolate chunk cookies

beberapa hari ini pengen banget ngemil good time atau choco mania, sayang di minimarket terdekat sedang kosong. akhirnya beli biskuit lain, pilih biskuit yang tulisannya biskuit sehat, setelah baca bahan-bahannya, ealah ya 'podho ae', sehat dari hongkong????xixixixixi

tidak puas dengan rasa 'biskuit sehat' yang tadi, aku bertekat membuat kukis sendiri, pilih yang praktis dan sesuai persediaan bahan di rumah...

akhirnya nemu resep chocolate chunk cookies di joy of baking, gulanya aku kurangin dikit karena gak suka manis, apalagi biasanya resep dari luar manis banget...

taraaaa, hmmmm yummy....meski aku nyetaknya ketebalan, seharusnya dipipihkan, aku pikir bakalan mbeleber, ternyata tidak, hihihihi....

Chocolate Chunk Cookies

2 cups (260 grams) all purpose flour

1 1/4 teaspoons baking soda

1/4 teaspoon salt

3/4 cup (170 grams) unsalted butter, room temperature

2/3 cup (130 grams) granulated white sugar

2/3 cup (140 grams) firmly packed light brown sugar

1 large egg

1 large egg yolk

1 1/2 teaspoons pure vanilla extract

1 1/4 cups (210 grams) chocolate chunks (can use chocolate chips)


Chocolate Chunk Cookies: Preheat oven to 350 degrees F (177 degrees C). Place one oven rack in the top third of the oven, and one oven rack in the bottom third of the oven. Line two baking sheets with parchment paper.

In a large bowl, whisk together the flour, baking soda, and salt.

In the bowl of your electric mixer (or with a hand mixer), beat the butter and sugars until light and fluffy (about 2 - 3 minutes). Scrape down the sides of the bowl. Add the egg and egg yolk, beating until well combined. Beat in the vanilla extract.

Gradually add the flour mixture to the creamed mixture and beat just until incorporated. Scrape down the sides of the bowl as needed. Stir in the chocolate chunks.

Form dough into balls, using 1/4 cup (55 grams) for each cookie. Place six balls of dough on each baking sheet. Gently flatten each ball of dough into a 2 1/2 inch (6.5 cm) round. Bake the cookies for about 15 - 17 minutes, rotating the baking sheets halfway through the baking time. The cookies are done when they are light golden brown in color and just set. They will still seem a little soft but they will firm up as they cool. Remove from oven and let the cookies cool a few minutes on the baking sheet before transferring them to a wire rack to cool.

Makes about 18 large cookies.

cheese muffins

memang sedang keranjingan bikin muffin, selain praktis juga kerena pengen menuntaskan aneka rasa permuffinan biar gak penasaran lagi ^^
dan sepertinya resep-resep praktis model begini yang paling sesuai untuk aku yang sedang punya bayi. jauh-jauh deh dari kue yang butuh persiapan dan proses yang lama, apalagi yang berhias-hias semacam birthday cake, kecuali untuk acara-acara tertentu *_^

Marvelous Cheese Muffins

Makes 1 dozen muffins.
1 3/4 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
2 tablespoons granulated sugar
1 large egg
1 cup milk
1/4 cup butter or margarine, melted
1/2 cup shredded cheddar cheese

1. In a large bowl, combine flour, baking powder, salt, sugar, and shredded cheese ; mix well. Make a well in the center of the mixture.
2. In another bowl, combine egg, milk, and melted butter; add to the flour mixture, stirring just until moistened. Spoon into greased muffin tins, filling two-thirds full.
3. Bake at 400°F (205°C) for 25 minutes

chocolate muffins, nyam nyam nyam

muffin coklat lagi, hmmm, nyam nyam nyam... kali ini coba resep dari salah satu blog favorit, mbak vania....
suka sekali dengan resep-resep muffinnya mbak vania (yang katanya dari buku kuno) yang mengutamakan kepraktisan tapi tetep syedeep. apalagi beliau juga memberikan tips-tips membuat muffin. percayalah begitu mempraktekkan tipsnya, gak bakalan ada lagi muffin yang malu-malu kucing gak mau menggunung ^^
yang jelas inti membuat muffin adalah bahan kering dicampur dengan bahan kering dan bahan basah dicampur dengan bahan basah, kemudian baru dicampur antara kering dan basah *halah bahasanya
selain itu ngaduknya juga gak boleh lama-lama, karena kalau kelamaan dan adonan menjadi encer muffinnya bakalan bantat, jadi secukupnya aja, bahkan menurut beberapa 'ahli' biarin deh meski masih ada yang menggumpal-gumpal, malah itu yang bikin muffin merekah ^^

Chocolate Muffins

1 cup all purpose flour
1/2 cup sugar
3 tbsp unsweetened cocoa powder
2 tsp baking powder
1/2 tsp salt
1 beaten egg
3/4 cup milk
1/3 cup cooking oil

In large bowl, stir together flour, sugar, cocoa, baking powder and salt
Make a well in center of dry ingredients. Combine egg, milk and oil. Add all at once to dry ingredients, stirring just until moistened. (Batter should be lumpy).
Spoon into greased muffin cups .
Bake 375 F for 20 minutes.

chocolate muffins

sedang penasaran dengan muffin, dulu pernah bikin tapi bentuknya tidak pernah menggunung karena anti baking powder, kalau sekarang sudah berdamai dengan baking powder ^^
coba-coba resep joy of baking, karena tidak ada brown sugar aku memakai palm sugar. konon katanya meski rasanya tidak sama, campuran gula pasir dengan palm sugar 1:1 cukup bisa digunakan sebagai pengganti brown sugar. nah itu dia kesalahanku, aku malah brown sugarnya diganti 100% palm sugar, jadinya lebih legit (baca : pahit), hihihihi

Chocolate Muffins:

1/2 cup (113 grams) unsalted butter, melted and cooled

2 large eggs

1 cup (240 ml) buttermilk

2 teaspoons pure vanilla extract

1 3/4 cups (230 grams) all-purpose flour

2/3 cup (60 grams) unsweetened cocoa powder

1 1/4 cups (265 grams) light brown sugar

1 teaspoon baking powder

1 teaspoon baking soda

1/2 teaspoon salt

1 cup (170 grams) milk or semisweet chocolate chips

Chocolate Fudge Frosting: (optional)

4 ounces (120 grams) unsweetened chocolate, coarsely chopped

2/3 cup (150 grams) unsalted butter, room temperature

1 1/3 cups (160 grams) confectioners (powdered or icing) sugar, sifted

1 1/2 teaspoons pure vanilla extract

Chocolate Muffins: Preheat oven to 375 degrees F (190 degrees C). Position rack in center of oven. Butter, or line with paper liners, 12 - 2 3/4 x 1 1/2 inch muffin cups.

In a large measuring cup or bowl whisk together the melted butter, eggs, buttermilk, and vanilla extract.

In another large bowl whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt. Stir in the chocolate chips. With a rubber spatula fold the wet ingredients into the dry ingredients and stir only until the ingredients are combined. Do not over mix the batter or tough muffins will result.

Evenly fill the muffin cups with the batter (the muffin cups will be full), using two spoons or an ice cream scoop. Place in the oven and bake until a toothpick inserted in the center of a muffin comes out clean, about 20 minutes. Transfer to a wire rack and let cool for about 5 minutes before removing from pan.

Chocolate Frosting: Melt the chocolate in a heatproof bowl placed over a saucepan of simmering water. Remove from heat and let cool to room temperature.

In the bowl of your electric mixer, or with a hand mixer, beat the butter until smooth and creamy (about 1 minute). Add the sugar and beat until it is light and fluffy (about 2 minutes). Beat in the vanilla extract. Add the chocolate and beat on low speed until incorporated. Increase the speed to medium-high and beat until frosting is smooth and glossy (about 2 -3 minutes). Spread a little frosting on each muffin with a knife or offset spatula.

Makes 12 - 14 regular sized muffins.
